If your entertaining over the weekend or have last minute guests these little canapes are a brilliant last second idea.
Ingredients.
1 pack of ready roll filo pastry
200g Brie
150g Blackberries
Fresh Thyme Leaves to dress
Butter for brushing the pastry
You will need a yorkshire pudding or cupcake size oven tray.
Put the butter in bowl and melt it either over a bain marie or I do it in a few seconds in the microwave.
Open out your pastry and cut through the layers creating squares big enough to fit in your oven tray with a nice over hang so your melted brie doesn't leak out. Brush each square with melted butter and place in the holes, keep doing it with more layers 2 to 3 layers of filo. Make sure you brush each one with butter so it crisps up nicely.
Cut up the brie into small squares and place each square into the individual filo parcels.
Add one blackberry on top of each one. Run your fingers down the stalks of Thyme sprinkling the leaves over the top of the parcels.
Bake them in the oven at 180 for a fan over for 10 -12 minutes or until the brie has melted and the filo has turned a golden brown.
Put on a pretty serving plate, season with black pepper and add a fresh sprig of thyme!
