Cheese and Potato Pie

Makes 4

400g Potatoes ( a dry one like Maris Piper)

30g Butter

1 Large Onion

2 Garlic Cloves

Bunch of fresh Thyme

150g Creme fraiche

750g Ready Made Puff Pastry

100g cheese (I used cheddar)

Egg yolk and water to glaze.


🥧 Peel and thinly slice the potatoes with a mandolin. Put them in a saucepan with cold water. Bring to the boil, reduce the heat and cook for a further 2 minutes until just tender.


🥧 Melt the butter in a pan add the onions, gently cook for ten minutes until soft then add the garlic and Thyme and cook for another 10 minutes until caramelised.


🥧 Line a baking tray, roll your pastry and cut 4 x 12cm rounds and 4 x 35cm squares. Chill the pastry whilst the onions and potatoes cool


🥧 Layer up your sliced potatoes, onions, grated cheese them top with more potatoes in the center of each 12cm round. Egg wash around the edge. Then put the larger squares in top pinching around the edge. Trim


🥧 Give them a good Egg wash and bake in the oven for 30 mins at 180° in a fan oven..


Slice and serve.
