These delicious fluffy pancakes are so versatile as they can be served with so many different options from fruit and maple syrup, bacon and creamy scrambled eggs to Nutella and Banana

Ingredients
300g Self-Raising Flour
1tsp Baking Powder
1 tbsp Caster Sugar
2 Medium Eggs
1 tbsp Maple Syrup (Plus extra to serve)
300 ml Milk
Tip the flour, baking powder and sugar into a large bowl and mix together. Make a well in the center using a the of the spoon. Crack the eggs into the well and start to whisk until smooth, slowly add the maple syrup and milk whilst whisking.
Heat a splash of oil and a small knob of butter in a non-stick frying pan until sizzling. Add spoonfuls of batter to make the pancakes the size you want. Cook until you can see the bubbles appearing on the surface, then flip them over and cook the other side.
Eat and enjoy them straight away or keep them warm in a really low oven whilst you make the rest!
